1. Remove rind from lemon with lemon zester. Or use vegetable peeler and cut into
thin strips. Set aside.
2. Brush Hummus Flatbreads on both sides with oil. Toast in toaster-oven until edges
are golden. Or warm in hot skillet over medium-high heat until edges are golden brown,
turning once.
3. Spread 1/4 of the cheese spread on each warm flatbread. Top with radish slices,
micro-greens and reserved lemon rind. Drizzle with oil.
