Ingredients
- 1 Lemon
- 1 pkg. (14 oz.) Kontos® Hummus Flatbread - (4 pieces)
- Extra Virgin Olive Oil - Plus extra for serving
- 1 pkg. (6.5 oz.) garlic & herb cheese spread
- 1 bunch radishes - thinly sliced
- 1 cup fresh micro-greens

Instructions
- 1. Remove rind from lemon with lemon zester. Or use vegetable peeler and cut into thin strips. Set aside. 2. Brush Hummus Flatbreads on both sides with oil. Toast in toaster-oven until edges are golden. Or warm in hot skillet over medium-high heat until edges are golden brown, turning once. 3. Spread 1/4 of the cheese spread on each warm flatbread. Top with radish slices, micro-greens and reserved lemon rind. Drizzle with oil.
