Cranberry Baked Brie & Pecan Bites

Melted brie topped with cranberry sauce and a candied pecan in side a Kontos Mini Fillo Cup.

Ingredients
  

  • 1 Kontos Mini Fillo Cups about 15–20
  • 1 block brie cheese cut into small cubes
  • 1 cup fresh cranberries
  • 1 cup pecans
  • A few sprigs of fresh thyme
  • 1 tablespoon olive oil
  • 1 cup water

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Prepare the fillo cups: Arrange the mini fillo cups on a baking sheet in a single layer.
  • Heat olive oil in a small saucepan over medium heat.
  • Add the cranberries and cook until they begin to soften.
  • Reduce heat to low and add 1 cup water, letting the cranberries caramelize into a thick sauce.
  • Transfer to a mixing bowl to cool slightly.
  • Place one cube of brie cheese into each fillo cup.
  • Bake the tray in the oven until the brie melts, about 5–7 minutes.
  • Remove from the oven.
  • Spoon the cranberry sauce into each cup.
  • Garnish each with a sprig of thyme and one pecan.
  • Serve: Ready to enjoy warm!
