Ingredients
Chuck Roast
- 3 lbs boneless chuck roast
- 1/2 cup flour
- 1 tbsp olive oil
- salt & pepper to taste
Fillo Cups
- 1 Tray Kontos Fillo Cups
- 1/4 cup chives chopped fine
- 1/4 cup fried onions prepared (store bought)
- 1/4 cup crumbled goat cheese
Instructions
- Set oven to 375 degrees farenheit.
Chuck Roast
- Add flour to a flat dish.
- Remove chuck roast from packaging and roll in the flour, covering all sides.
- Season generously with salt and pepper (however you like it).
- In a dutch oven, heat olive oil over medium high heat.
- Sear the chuck roast on all sides, about 2-3 minutes each side.
- Once seared, cover the dutch oven and put the roast in the oven for about 30 minutes per pound of meat. (For 3 pounds, 1.5 hours).
- Once cooked, remove from oven and let it rest for 15 minutes covered.
- Remove the chuck roast, from the dutch oven and with two forks shred the meat and transfer to a bowl.
Fillo Cup Assembly
- Place fillo cups on a baking sheet and fill each cup with a spoonful of meat.
- Add the cheese, fried onions, and chives.
- Place each fillo cup on a baking sheet and put in the oven for 5 minutes to brown the fillo cups and crisp the edges of the meat.
