Chuck Roast Fillo Cups

Slow cooked chuck roast stuffed in a fillo cup topped with fried onions, goat cheese, and fresh chives.

Ingredients
  

Chuck Roast

  • 3 lbs boneless chuck roast
  • 1/2 cup flour
  • 1 tbsp olive oil
  • salt & pepper to taste

Fillo Cups

  • 1 Tray Kontos Fillo Cups
  • 1/4 cup chives chopped fine
  • 1/4 cup fried onions prepared (store bought)
  • 1/4 cup crumbled goat cheese

Instructions
 

  • Set oven to 375 degrees farenheit.

Chuck Roast

  • Add flour to a flat dish.
  • Remove chuck roast from packaging and roll in the flour, covering all sides.
  • Season generously with salt and pepper (however you like it).
  • In a dutch oven, heat olive oil over medium high heat.
  • Sear the chuck roast on all sides, about 2-3 minutes each side.
  • Once seared, cover the dutch oven and put the roast in the oven for about 30 minutes per pound of meat. (For 3 pounds, 1.5 hours).
  • Once cooked, remove from oven and let it rest for 15 minutes covered.
  • Remove the chuck roast, from the dutch oven and with two forks shred the meat and transfer to a bowl.

Fillo Cup Assembly

  • Place fillo cups on a baking sheet and fill each cup with a spoonful of meat.
  • Add the cheese, fried onions, and chives.
  • Place each fillo cup on a baking sheet and put in the oven for 5 minutes to brown the fillo cups and crisp the edges of the meat.
