Ingredients
- 2 tbsp extra virgin olive oil
- 3/4 tsp freshly squeezed lemon juice
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
- 2 Kontos® Whole Wheat Pocket Pita, sliced in half
- 1/4 cup Kontos® Hummus
- 1 small vine ripened tomato, sliced
- 1 Monterey Jack, Cheddar, or other deli cheese, sliced or ¼ cup Feta crumbles
- 1/2 ripe avocado, peeled, pitted, and sliced
- 1/2 small red onion, sliced
- 1/2 cup baby arugula
- 1 Handful pea shoots or bean sprouts
Instructions
- In a small bowl, whisk together olive oil, lemon juice, and oregano. Season to taste with salt and pepper.
- Spread hummus inside each pita pocket. Divide the rest of the ingredients between the pockets. Drizzle with dressing and serve.
